Central production and dark kitchens

When one kitchen feeds forty

A central production unit concentrates both the efficiency and the risk. A cold chain failure in one chiller does not stay in one chiller, it travels to every site that took a delivery that morning.

What makes it hard

Scale multiplies the consequence

  • Cook-chill has to be evidenced

Chilling within the required window is the control point the whole operation depends on, and it needs a record per batch, not per day.

  • Traceability leaves the building

Once product is on a van, the record has to connect what was made, when, by whom, and where it went.

  • One failure reaches everywhere

A problem found downstream means working backwards through production to establish scope. That is only possible if the record is granular.

  • Shift production, continuous risk

Teams change through the day while the same equipment runs continuously. Accountability has to follow the shift, not the asset.

What changes

A record granular enough to work backwards from

A chiller timeline: readings drifting for a fortnight before the failure.
  • Readings against the asset

Every blast chiller, holding fridge and hot hold with its own safe range, so an out-of-spec reading is caught where it happens.

  • Attributed to a shift

Nothing is recorded without an open attendance and a personal PIN, so you can place a person at a process at a time.

  • Equipment history that accumulates

A chiller that has been drifting for a fortnight shows as a pattern rather than as fourteen unconnected entries.

  • Failures escalate immediately

An exception opens a corrective action and alerts a manager at the point of entry, while the product is still in the building.

Working backwards

A site reports a problem with Thursday’s delivery

A receiving kitchen flags a chilled product that arrived warm. The question is immediately how much was affected, which equipment it came off, who ran that process and whether anything else went out on the same cycle.

  • Every reading taken that morning is timestamped against its asset
  • The person who recorded each one is named, with their shift
  • The chiller’s own history shows whether this was sudden or building
  • Any corrective action already raised against it is attached
Every record placed against a named person on an open shift.
